Hummus

At (Wendy and SWR)'s wedding, the caterers brought out some hummus.

I tried to make one yesterday, and I think the consistency was a little off (probably too dry, and a little too much tahini) but it's a good jumping off point.


1 28 oz can of chick peas (makes you wonder what dude peas are like) 3 little pieces of garlic (can't remember the word right now, but I usually use 7 myself most people find that's too much) about 125 mL of tahini about 75 mL of olive oil, preferably virgin Paprika and parsley to garnish

Using a hand blender, put about half the dry ingredients in a bowl, then pour about half the wet on top. Puree it, and gradual add in the balance of the ingredients. Put in a bowl, and garnish.

As I was saying to Patti at the wedding, my (future) sister-in-law(-in-law) usually makes a wetter hummus based on an Armenian recipe her friends use, but that just means you can't get it wrong.

Thanks Kael. I'm glad you wrote this out because I had forgotten the word "tahini" and I have no idea what it is, so it'll be a surprise. Do you think it's available in Thunder Bay?

Definition: [tah-HEE-nee] Used in Middle Eastern cooking, tahini is a thick paste made of ground sesame seed. It's used to flavor various dishes such as hummus and baba ghanoush.

It's starting to show up in ordinary grocery stores near things like organic peanut butter, or almond butter. It will probably be in a jar...about the colour of almond butter and the consistency of honey.

One More Thing....
When I made that I forgot to add some lemon juice. Again, this is to taste, but anywhere from a teaspoon to a quarter cup. The nice thing about this stuff is that you can sort of slowly add stuff until it tastes good for you. If you can't find tahini, try looking for a "natural foods" store or a falafel shop, and see if they can tell you where to find it. Hope that helps....
